Restaurant Style Singaporean Rice Recipe By My AWeSOme ReCIpeS




Ingredients:

Prepare Chicken:

-Dahi (Yogurt) 3 tbs

-Lal mirch powder (Red chilli powder) 1 tsp

-Zeera powder (Cumin powder) ½ tsp

-Dhania Powder (Coriander powder) 1 tsp

-Paprika powder 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Namak (Salt) 1 tsp or to taste

-Tikka masala 1 tbs

-Mustard paste 1 & ½ tbs

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Lemon juice 2 tbs

-Boneless Chicken small cubes 600g

-Cooking oil ½ Cup

-Lehsan (Garlic) sliced 5-6 tbs

-Hari mirch (Green chillies) chopped 4-5 tbs

Sauce:

-Mayonnaise ½ Cup

-Tomato ketchup 1/3 Cup

-Hot sauce 1 & ½ tbs

-Mustard paste 2 tbs

-Kali mirch powder (Black pepper powder) ¼ tsp

-Namak (Salt) pinch or to taste

-Lal mirch powder (Red chilli powder) ¼ tsp

-Reserved Garlic oil 4 tbs

-Adrak (Ginger) chopped 1 tbs

-Gajar (Carrots) sliced 1 Cup

-Shimla mirch (Capsicum) diced 1 Cup

-Band gobhi (Cabbage) diced 1 & ½ Cups

-Hara pyaz (Spring onion) white diced ½ cup

-Har pyaz (Spring onion) leaves chopped 3-4 tbs

-Soy sauce 1 tbs

-Coal for smoke

Assembling:

-Rice sella boiled with salt 400g

-Prepared sauce

-Prepared Chicken with vegetables

-Spaghettis boiled 250g according to packet instructions

-Fried garlic & green chillies

-Prepared sauce



Directions:

Prepare Chicken:

-In a bowl add yogurt, red chilli powder, cumin powder, coriander powder, paprika powder, turmeric powder, salt, tikka masala, mustard paste, ginger garlic paste, lemon juice & mix well.

-Add boneless chicken, mix well, cover & marinate for 15 minutes then set aside.

-In a saucepan add cooking oil & heat it.

-Add garlic, mix well & fry for 30 seconds.

-Add green chillies, mix well & fry until golden brown.

-On a bowl place a sieve & sift fried garlic & green chillies then set aside. Reserve garlic oil for later use.

Prepare Sauce:

-In a jug add mayonnaise, tomato ketchup, hot sauce, mustard paste, black pepper powder, salt, red chilli powder & mix well. Transfer to a squeeze bottle then set aside.

-In a wok add reserved garlic oil, ginger, mix well & sauté until light golden.

-Add marinated chicken, mix well & cook on medium flame until done (approx. 15-18 minutes).

-Add carrots, capsicum, cabbage, spring onion white & mix well.

-Add spring onion green & mix well.

-Add soy sauce, mix well & cook for a minute.

-Turn off the flame now & give coal smoke for 2-3 minutes, then set aside.

Assembling:

-In a serving dish, add boiled rice & drizzle prepared sauce over it. Add prepared chicken with vegetables, boiled spaghettis, fried garlic & green chillies, prepared sauce, garnish with spring onion green & serve!

Tarkeeb:

Prepare Chicken:

-Bowl may dahi, lal mirch powder, zeera powder, dhania powder, paprika powder, haldi powder, namak, tikka masala, mustard paste, adrak lehsan paste, lemon juice daal achi tarah mix karlen.

-Ab boneless chicken daal kar mix karlen, dhak kar 15 minutes k liye chor den.

-Saucepan may cooking oil daal kar garam karlen.

-Lehsan daal kar 30 secs tak milayen. Ab hari mirch daal kar golden brown honay tak fry karlen.

-Aik bowl par sieve rakh kar fry kia hua lehsan or hari mirch chaan len or alag rakhden. Bacha hua oil agay k use k liye rakh den.

Prepare sauce:

-Aik jug may mayonnaise, tomato ketchup, hot sauce, mustard paste, kali mirch powder, namak, lal mirch powder daal kara chi tarah milayen.

-Is sauce ko squeeze bottle may bhar kar rakhlen.

-Aik karahi may lehsan wala oil garam karen.

-Ab marinated chicken daal mix karen or darmiyni anch par itna pakayen k chicken pak jaye (approx. 15-18 minutes).

-Ab gajar, Shimla mirch, band gobhi, hara pyaz ka safed daal kar milayen.

-Hara pyaz daal kar phir mix karen.

-Soy sauce daal kar mix karen or aik minute tak pakalen.

-Flame off karden. Ab 2-3 minutes tak coal smoke dekar alag rakh den.

Assembling:

-Serving dish may boil kiye huye chawal phela den. Ab tayar kia hua sauce daal kar, tayar ki hui chicken & vegetables, boiled spaghettis, fried lehsan or hari mirch daal kar upar se tayar kia hua sauce daal den.

-Hari piyaz se garnish kar k serve karen!
